Bread Crumb Meringue Cookies4 egg whites dash of salt 2 cups sugar 1 cup fine dry bread crumbs 1 cup finely chopped pecans 1 tsp. vanilla extract Beat egg whites (at room temp) in a medium mixing bowl until foamy; add salt. Gradually add sugar, 1 tbsp. at a time, beating until stiff peaks form. Fold in bread crumbs, pecans & vanilla. Drop by heaping tsp. and 2' apart onto waxed paper-lined cookie sheet. Bake at 350 for 15 min. Remove from wax paper and cool on wire rack. yield 7 dozen
