Beat to-gether:
2 cups sugar
1 cup wesson oil
2 large eggs
1 tsp. vanilla
 
Add:
2 1/2 cups flour
2 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1 tsp. salt
1 cup chopped nuts (pecans)
 
Batter will be thick
 
Fold in 4 cups chopped apples
 
Pour in greased 13 x9 x2" pan. 
Bake at 350 degrees for 50 min. 
Cool
 
Top with Cream Chees Icing.  Recipe as below or use Cream Cheese Icing from your grocery store. 
 
CREAM CHEESE ICING
 
6 oz. cream cheese
3 tbsp. butter
   Let cheese and butter stand to room temp. then blend with mixer.   Add 1 1/2 cup powdered sugar and 1 teaspoon vanilla.   Spread on cake and sprinkle with pecans.
